I love stir fry for a quick weeknight meal. This recipe uses only 3 vegetables which means less slicing! Peppers add a tasty sweet flavour to the stir fry, and I love using snap peas because they’re already washed and don’t even need to slice them! I sliced mine in half for this stir fry, but you really don’t need to if you’re in a pinch.
How to make this Easy 20-Minute Sweet Chili Stir-Fry:
To make this recipe, you’ll start by sautéing the chicken until it’s fully cooked, about 3-4 minutes.
You’ll then add the remaining ingredients, except rice and garnishes – pineapple, sugar snap peas, red onion, pepper, chili flakes, hoisin, and sweet chili sauce. Continue stir frying over med-high heat until vegetables are tender but still crispy, about 6 minutes.
Serve over rice and top with green onion slices and sesame seeds (optional).

Ingredients
2 chicken breast, sliced into strips
½ cup rice, cooked
1 tbsp olive oil
½ cup pineapple pieces
1 package Sugar snap peas, halved
¼ Red onion, sliced
1 Red pepper, sliced
¼ tsp chili flakes
¼ cup hoisin
2 Tbsp sweet chili sauce
Green onion for serving
Sesame seeds for serving (optional)
Instructions
- Heat a large non-stick frying pan over med-high heat. Add oil, then sauté chicken until cooked, about 3-4 minutes.
- Add pineapple, snap peas, red pepper, onion, hoisin, sweet chili sauce, and chili flakes.
- Continue cooking over med-high heat until vegetables are tender but still crispy, about 6 minutes.
- Serve over rice. Top with green onion and sesame seeds.
