Lentil Tacos with Avocado Cilantro Sauce
This Lentil Tacos with Avocado Cilantro Sauce recipe from Lentils.org has the familiar flavour and texture of tacos, but is completely plant-based. I love that red lentil are packed with heart-healthy fibre and plant-based protein, and you’ll love how quickly they cook!
To make these Lentil Tacos, you’ll first sauté onions and garlic in a pan until browned, then add spices and cook for another minute. You’ll then add the red lentils and broth, and simmer until liquid has absorbed. Meanwhile, you’ll prepare the avocado sauce by combining the ingredients in a small food processor until smooth.
Once lentils have cooked, you’ll assemble the tacos with lentil filling, sauce, and toppings. Yum!
What you’ll Need:

1 tbsp olive oil

1 onion

2 cloves garlic

2 tsp chili powder

1 tsp cumin
-
1/2 tsp paprika

1/2 tsp oregano

1/4 tsp chili flakes

1 cup split red lentils
-
2 cups low-sodium vegetable broth
-
1/4 tsp salt
-
8 corn tortillas
-
2 mangos
-
1/2 red onion
Sauce:
-
1 avocado
-
small bunch of cilantro
-
12 lime
-
1 tbsp maple syrup
-
1/4 tsp salt
Makes 4 servings.
