Black Bean Tacos with Mango Slaw
This Black Bean Tacos with Mango Slaw recipe from Simplicious Food is loaded with veggies and fibre. The recipe is really simple to follow, and the mango salsa topping is delicious!
To make, you’ll roast peppers in the oven while you sauté onion on the stove top. You’ll add garlic and spices, then cook mushrooms in the same pan. Once mushrooms are cooked, you’ll combine with the onions, roasted peppers and black beans until warmed, then assemble tacos with the delicious fresh mango salsa.
What you’ll need:

1 can black beans, no added salt

1 package of small whole wheat or corn tortillas

1/2 red onion
-
2 cloves garlic
-
1 tbsp chilli powder
-
2 tsp cumin
-
sea salt and pepper, to taste
-
1 bell pepper
-
2 cups sliced mushrooms
-
1 cup grated sharp cheddar cheese, mozzarella, or crumbled feta
-
1 ripe avocado
For the Salsa:
-
1/4 cup diced red onion
-
1 ripe mango
-
1 cup diced cherry tomatoes
-
1/2 cup diced cilantro
-
1/4-1/2 jalapeño (optional)
-
juice from 1/4 of a lime
-
sea salt, to taste
Makes 3-4 servings
