Chickpea Tacos with Avocado Cream
This Chickpea Tacos with Avocado Cream recipe from Easy Cheesy Vegetarian is the definition of a quick and easy weeknight dinner. All you need is a microwave and a small food processor to prep this real easy recipe.
Simply mash chickpeas, mix with spices and tomatoes, and gently heat in the microwave. The avocado cream sauce is what takes this recipe to the next level. To make it, you’ll simply blend the sauce ingredients in a food processor – that’s it!
These tacos are loaded with vegetarian protein and fibre from chickpeas, and healthy fats from the avocado cream sauce. I suggest adding some additional veggies to this recipe with some slaw (as shown in my image) or a side salad to keep things balanced.
What you’ll Need:

2 x 400g canned chickpeas

2 medium tomatoes

2 Tbsp fresh corriander, chopped (we used herb paste to save on time)

1/2 tsp smoked paprika

salt and pepper, to taste

1 clove garlic

1 Tbsp lemon juice
-
2 Tbsp Greek yogurt
- 2 avocados

1 Tbsp extra virgin olive oil
-
8 mini tortillas
