Recipe Review – Asparagus Brie Grilled Cheese

Asparagus and Brie Grilled Cheese

Grilled cheese. Need I say more? This Asparagus and Brie Grilled Cheese recipe from The Foodie Dietitian is perfect for those days when you’re looking for some comfort food but still want to get your veggies in. Brie cheese gives this sandwich a delicious creamy texture, and the addition of asparagus helps keep things balanced.

To make, you’ll combine the pesto ingredients in a small food processor. For the sandwiches, you’ll roast asparagus in olive oil, salt, and pepper until tender. You’ll then assemble the sandwiches and grill on a pan until golden brown and heated through. Yum!

What you’ll need:

Pesto:

  • 2 cloves garlic

  • 4 cups chopped arugula

  • 3.4 cup evoo

  • 1/4 cup pine nuts

  • 1/2 cup parmesan cheese

  • 1 tbsp lemon zest

  • salt and pepper, to taste

Sandwiches:

  •  10 spears of asparagus

  • 1/2 tbsp olive oil

  • salt and pepper, to taste

  • 8oz brie cheese

  • 4 tbsp arugula pesto (above)

  • 4 slices of wheat bread

  • 2 tbsp unsalted butter

Makes 4-6 servings

Time: 30 minutes
