One Pan Balsamic Chicken and Veggies
This one-pan recipe from Cooking Classy uses quick-cooking veggies and chicken pieces for a flavourful meal in 20-minutes. I visited my local grocery store salad bar to purchase the matchstick carrots for this recipe. They cook really quickly and require no chopping or prep!
To make this One-Pan Balsamic Chicken and Veggies recipe, you’ll start by sautéing chicken pieces in a skillet until cooked through. Meanwhile, you’ll make the balsamic sauce by mixing the dressing, balsamic vinegar, honey, and red pepper flakes.
Once the chicken is cooked, you’ll add 1/2 the sauce to the pan, toss to coat, then transfer chicken to a plate. Next, you’ll sauté the remaining veggies in the same pan until tender, then add the remaining sauce to the pan. Lastly, you’ll add the cooked chicken back to the pan to reheat, then serve immediately. Yum!
What you’ll Need:

1/4 cup + 2 tbsp Italian salad dressing

3 tbsp balsamic vinegar

1 1/2 tbsp honey

1/8 tsp red pepper flakes

1 1/4lb chicken breast tenderloins

2 tbsp olive oil

salt and pepper, to taste

1 lb asparagus

1 1/2 cup matchstick carrots

1 cup grape tomatoes
