Description
This Bruschetta with White Bean Spread is the perfect appetizer or lunch recipe. It has all the familiar flavours of bruschetta but with some added protein from the white beans to keep things balanced.
Ingredients
Bruschetta:Â
1 container of cherry tomatoes, quartered
1/4 cup basil, chopped
¼ cup finely chopped red onionÂ
1 baguetteÂ
1 tbsp extra virgin olive oilÂ
¼ tsp saltÂ
1 clove garlic, minced
Parmesan cheese or balsamic glaze for serving
White bean spread:Â
2 cups navy beansÂ
3 tbsp extra virgin olive oilÂ
1/4 tsp saltÂ
2 cloves garlic
2 tbsp lemon juiceÂ
1/2 tsp rosemaryÂ
Instructions
- Dice the tomatoes and place them in a medium bowl. Add salt to the tomatoes and mix. Let sit for 10 mins.
- After 10 minutes (or longer if you have the time), strain the excess water. Add the remaining bruschetta ingredients to the bowl mix until evenly combined.
- While you’re waiting for the tomatoes to strain, add the white bean spread ingredients to a food processor. Blend until smooth. Season with salt and pepper, to taste.
- If you’re using a baguette or fresh loaf of bread, slice and brush one side with olive oil. Broil in your oven until lightly toasted.
