Description
These Falafel Inspired Chickpea Patties with Garden Salad and Tzatziki are perfect for your weekly meal prep. Make a batch on Sunday and bring one for lunch each day. They’re so simple to make and ready in 30 minutes!
Ingredients
Patties:
2 x 398ml can chickpeas
½ onion, chopped
2 garlic cloves, minced
1 tbsp olive oil
1 tsp cumin
½ tsp coriander
¼ tsp cheyenne
2.5 tbsp parsley paste OR ¼ cup fresh parsley leaves
2 tsp lemon juice
2 tbsp water
1 Tbsp olive oil (if using fresh parsley)
1 tbsp flour
Salad:
2 cups cooked quinoa
1 cucumber, shaved into ribbons
2 tomato, thinly sliced
Tzatziki:
½ cup full fat Greek yogurt
2 Tbsp shredded cucumber
2 garlic cloves, minced
Salt and pepper, to taste
2 tsp lemon juice
2 tbsp olive oil
¼ tsp dried dill
Instructions
- In a small pan, heat oil and sauté onion until softened and caramelized, about 10 minutes. In the last few minutes of cooking, add the garlic. Add spices in the last minute of cooking and combine until fragrant.
- Meanwhile, process chickpeas and parsley in a food processor. The chickpeas should almost be completely ground, though a few chunks are OK.
- In a large bowl, combine chickpea mixture, onions and remaining patty ingredients. Form into 4 patties. Bake at 400F for 20 mins, flipping half way.
- Meanwhile, make tzatziki by mixing all ingredients together in a small bowl.
- Divide quinoa, cucumber and tomato slices between four plates. Top each with a cooked patty and serve with tzatziki.
Notes
Short on time or energy? Use store bought tzatziki.
