These Healthy Chickpea Peanut Butter Cups have all the familiar creamy peanut buttery chocolate flavour with a secret ingredient – chickpeas!
Ingredients

1 can of chickpeas (398ml), drained and rinsed
1 cup natural peanut butter
3 tbsp honey
1/2 cup dark chocolate chips
Instructions
- Using a food processor, combine chickpeas, peanut butter, and honey. Process ingredients until smooth.
- Evenly distribute the chickpea mixture among a 12-cup muffin tin. Press the mixture into the bottom of each cup.
- Melt the chocolate chips using a bowl over boiling water.
- Top the chickpea mixture with melted chocolate and spread with a spoon until evenly distributed.
- Refrigerate the muffin tin until the chocolate has hardened. Remove the peanut butter cups from the tin and store in a sealed container in the refrigerator for up to 4 days.
Notes
Use a seed-based butter or other nut-butter alternative for a nut-free option.
Swap honey for maple syrup, and use dairy-free chocolate to make these cups vegan.
