No-Bake Chickpea Cookie Dough Energy Bites
Any other cookie dough fans out there?! Since I can remember, I’ve loved cookie dough. Cookie dough is ALWAYS my chosen ice cream flavour, and I can’t tell you how many times I’ve stood by the fridge and shamelessly eaten bites of raw store bought cookie dough from the tube (this was pre-nutrition school where I was scared straight by food safety classes). Don’t do this btw – there are raw eggs in there!
Needless to say, I’m completely hooked on these energy bites that taste just like cookie dough. They’re so delicious, and with a sneaky secret ingredient that you’d never even know was in there – chickpeas! Chickpeas are an excellent source of heart-healthy fibre and plant-based protein. I’m always on the hunt for new ways to include more legumes into my diet – especially for a snack between meals. This is one of my new favourite ways to get legumes into my routine. How to make No-Bake Chickpea Cookie Dough Energy Bites
I love chickpeas, so these no-bake chickpea cookie dough energy bites are an easy sell. But if you have someone at home that isn’t a legume fan, these bites are a great way to add them into your routine in a subtle way. I call it a beginner chickpea recipe.
To make these no-bake chickpea cookie dough energy bites, start by blending the chickpeas in a food processor until it forms a smooth dough-like texture. Next, you’ll add all your ingredients to a large mixing bowl and mix until combined. I use whole oats in this recipe because I enjoy the texture that it gives these bites. If you prefer a smoother texture, you can process the oats into a finer texture along with your chickpeas.
Allergen-free alternatives
This recipe also calls for peanut butter but can be swapped for any nut butter or a nut-butter alternative such as Sunbutter or Wowbutter.
I like to chill the dough in the fridge for a few minutes before rolling them into bites. I find that this makes it less sticky and easier to roll. Once you roll these bites, they’re done! No baking required.
Snacking on-the-go
These bites make a great snack on the go. I especially love energy bites because you can adjust your portion based on your hunger. They’re great to use as a morning snack, or post-workout snack. I’ll also sometimes include a couple of bites with my lunch if I need a little something extra.

Blend chickpeas in a food processor until smooth.

Add blended chickpeas into a large bowl and add the remaining ingredients. Mix well until ingredients are dispersed evenly. In a large bowl, combine all ingredients. Chill mixture in the refrigerator for at least 20 minutes. This will make it easier to roll the bites later.

Remove the dough from the refrigerator and roll into bite-size balls using about 1.5 tbsp of mixture for each.

Store in a sealed container in the refrigerator.
