This simple one-pot meal is perfect for busy weeknights. With only a handful of ingredients, you’ll have dinner ready in no time.
Ingredients
1 tbsp oil
2 garlic cloves, minced
1/2 red onion, chopped
1 Red pepper, chopped
1lb ground chicken
2 tbsp dill paste (or fresh)
1 cup diced tomato (canned)
1 1/2 cup cooked quinoa (about 1/2 cup dry)
4 cup spinach
1/2 cup feta
Instructions

Heat oil in a large pan on medium-high heat. Add peppers, onion and garlic, cook until onion softens and becomes translucent, about 4 minutes. Add ground chicken to the pan and season with salt and pepper, to taste. Cook chicken until no longer pink, stirring often to break up the meat.

Once chicken is cooked (make sure there is no pink!), turn heat to low. Mix in spinach leaves, dill, tomatoes, and cooked quinoa. Mix until spinach is wilted and mixture is heated through.

Top with feta cheese and serve warm.
