Quick and Easy Naan Bread Pizza
It’s no secret that I LOVE lentils as a quick, nutritious, and inexpensive protein option. This Quick and Easy Naan Bread recipe from Lentils.org sneaks in some extra protein and fibre by adding Split Red Lentils to the cheese topping, making this pizza very filling.
This recipe is ready in about 35 minutes, and you can use any pizza toppings that the family will enjoy. I love using naan or pitas as an individual pizza dough. Perfect for one or for a make-your-own pizza night with the family!
Cooking tip: as a rule of thumb, lentils double in volume when cooked, so you’ll need 1/2 cup dry for this recipe.
To make, you’ll mix lentils with cheese, salt and pepper and divide between Naan pieces. You’ll then add the remaining pizza toppings and bake until crispy and golden brown. Lastly, you’ll top the pizzas with arugula after removing from the oven and enjoy immediately. Who said pizza can’t be healthy?
