Shrimp Tacos with Cabbage Slaw
These Shrimp Tacos with Cabbage Slaw from Well Plated are as delicious as they look. Using shrimp as a protein source makes this meal really quick to make, perfect for busy weeknights. We also used pre-shredded slaw for added convenience.
To make, you’ll season shrimp and let sit while you prepare the sauce. The simple sauce is made by combining the ingredients in a food processor, then tossing with cabbage. You’ll sauté the seasoned shrimp in a pan with oil which only takes about 4 minutes, then assemble tacos with warm tor tortillas, slaw, and optional additional toppings. Yum!
What you’ll need:
For shrimp tacos:

1 lb large shrimp
-
1 tbsp EVOO
-
1 tsp chili powder
-
1 tsp ground chipotle chili
-
1 tsp ground cumin
-
1/2 tsp kosher salt
-
6-8 corn tortillas
-
optional toppings: avocado, Greek yogurt, lime juice
For the slaw and shrimp taco sauce:
-
1 cup plain Greek yogurt
-
2 tbsp EVOO
-
1 clove garlic
-
1/2 small jalapeno
-
1/4 cup fresh cilantro leaves
-
1/4 tsp kosher salt
-
zest and juice from 1 large lime
-
2 cups shredded cabbage (or slaw mix)
Makes 3-4 servings
